Dakdoritang (Chicken Casserole)


Ingredients

Chicken Pieces (about one whole chicken),    Onion (1), Small Potatoes (2), Chilly Pepper (1), Carrot (1), Ground Black Pepper, Salt

Seasoning

Gochujang* (2 tbs), Ginger (2 tbs), Soy Sauce (1tbs), Garlic (2 tbs), Sugar (1/2 - 1 tbs), Rice Wine (2 tbs). 

Method

1. Clean vegetables and cut into big pieces. (About 2 x 1 x 2)

2. If you have time, marinate chicken pieces with white wine and ginger beforehand.

3. Make seasoning.

4. In a big, deep skillet stir chicken pieces and add vegetables. Stir for about five minutes, and then add water (1 - 2 cups of water, depends on chicken pieces), and add half of the seasoning.


5. Boil for about 30 minutes over medium heat. Add the rest of the seasoning, and boil for about ten more minutes. When water is reduced, add salt and black pepper.

Not for the feeble at heart. This hot dish illustrates well how spicy Korean food can be. Of course you can always control the spiciness as you cook and be sure to eat plenty of rice with Daktoritang to offset the heat.
